Why are some plural forms the same as the singular form?

As in words like "deer" and "offspring." I know the reason for plural forms such as mouse =>mice is because an internal vowel change was used to indicate plural/singular inflection in Anglo-Saxon, but what is the reason for the forms that do not change. Sources are appreciated.
